Tomato & Onion Salad


A quick onion & tomato salad: I would usually use red onion for this type of salad, since it is a bit sweeter, but I didn't have any on hand. So, I rinsed the white onion to make it more mild (a tip I picked up from a cooking class) and then soaked them in sugar water for 10 minutes. Worked great! Added a tomato that was ripening on my windowsill for a few days (as good as can be expected in the winter). Finally, topped it off with a homemade balsamic vinaigrette made with high quality balsamic, a spoonful of dijon, extra virgin olive oil and fresh ground kosher salt and black pepper. Yum! :) We did have steaks and freshly steamed broccoli as well, but apparently I was too hungry to stop and take a picture! :)
